Known in the southern hemisphere as "Entraña," skirt steak is arguably the most flavorful cut of beef, making it the perfect choice for grilling. Though it can be tougher than other cuts, this 3 lb cut delivers unbeatable flavor, especially when cooked properly. Skirt steak is the go-to cut for fajitas and can also shine in dishes like Mexican arrachera, carne asada, or Chinese stir-fry. While often confused with flank steak, the two are quite different – skirt steak is prized for its rich beefy flavor and tenderness when cooked over high heat.
Unlike flank steak, the skirt steak doesn’t require marinating. A simple seasoning of salt is all you need to bring out its natural taste. It’s best cooked medium-rare to medium and seared at extremely high heat, creating a crispy, "crunchy" outside with a tender, rarer inside. When sliced against the grain, skirt steak becomes a melt-in-your-mouth treat, perfect for your next BBQ or taco night.
